I would like to customize the mailchimp sign up form.
What are the files I must override to achieve this purpose?

The module styling is located in the file \media\mod_mailchimpsignup\css\mailchimpsignup.css

However, because this file will be overwritten with every joomlamailer update it is not recommended to edit this file. Better would be to add your custom css rules to one of your template's css files for example.
